Sweet and Sour Dressing with Modena "IGP" Balsamic Vinegar

Accompaniments: it is ideal just as it is for seasoning fresh salads, pinzimonio (a sauce made from lemon, salt, pepper and oil), and grilled vegetables. Itīs delicious over risotto and first courses based on vegetables and fruit. This sweet and sour dressing enhances the flavor of roasts as well as cheeses, both fresh and aged. Its delicate taste combines well with sweets, bakerīs cream (custard) and ice cream. Just a few drops suffice to liven up the flavor of fresh fruit salads.

This is made according to traditional Modenese methods, with a wise mixture of the best cooked must and the most excellent wine vinegars. The grapes are harvested in late autumn, when the sugar content reaches its peak. The cooking of the must, over a moderate flame, is slow and prolonged. Aged for a long time in precious wood barrels, it has an exquisite fragrance and an intoxicating taste.
